A few weeks ago, our friend, Lauren, came over for dinner. We decided to keep it simple and make Fish Tacos. This was actually our first time both making and eating fish tacos. This turned out to be a good meal for a light summer dinner. We served the fish tacos with fresh mango salsa, fresh guacamole, cabbage, and a slice of lime. The mango salsa was probably the highlight of the meal. Although these were delicious, next time we think we would like to try seasoning the fish itself a bit more. We used a chile-lime rub this time, but we think the fish could have been seasoned a little bit more. Overall, a great meal and the perfect recipe for a summer night.
Ingredients
- yellow corn flour tortillas, taco sized
- fresh fish (popular choices are tilapia, mahi mahi, halibut)
- Cabbage, chopped
- Seasoning (we used a Chile-Lime Rub)
- Mango Salsa, recipe below
- Guacamole
Directions
- Preheat grill over medium-high heat (lightly oil the grill).
- Season fish with olive oil and seasoning of choice.
- Cook fish on grill several minutes on each side until cooked all of the way through
- Transfer fish to plate and cut.
- Assemble tacos with grilled fish, guacamole, mango salsa, cabbage and fresh lime juice.
Mango Salsa
Ingredients
- 1 ripe mango, peeled and dicced
- Tomatoes (~4)
- 1 small red onion, diced
- ~1/2 cup fresh cilantro, chopped
- 2 limes, juiced
- 1 jalapeno, diced
- kosher salt
Directions
- Prepare ingredients as directed, mix, and serve!
