Swiss Oatmeal

We were very excited to try out a new recipe that Mary’s friend, John shared with her for Swiss Oatmeal.  This recipe is very similar to our Overnight Oats, except these Swiss Oats are made with Steel Cut Oatmeal.  We love the taste of Steel Cut Oats but we hardly ever make them since the cooking time is so long.  However, with this recipe, you can enjoy the taste of Steel Cut Oats without the long cooking process.  The oats only cook for 8 minutes and then they are placed in the refrigerator for at least 12 hours.  We made some changes to the original recipe, but the idea is still the same.  We are always looking for breakfast ideas, especially during the summer months when hot oats are not always appealing.  This recipe can also be adapted and served hot (see note below).  These Swiss Oats can serve as an excellent post workout meal or snack as well.

Makes: 2 2/3 cup servings

Ingredients

  • 3/4 cups  water
  • 3/8 cup  steel-cut oats (between 1/4 cup and half a cup)
  • 3/8 cup  unsweetened vanilla almond milk (between 1/4 cup and half a cup)
  • 3/8 cup plain yogurt (between 1/4 cup and half a cup)
  • 1 1/2 Tbsp.  honey
  • 1/8 tsp.  cinnamon
  • pinch salt
  • 1/4 cup  assorted dried fruit (we used cherries & raisins)
  • handful coarsely chopped almonds, toasted
  • Sliced banana

Directions

  • In 2-quart saucepan combine water and oats. Bring to a boil; reduce heat. Simmer, uncovered, 8 minutes (oats will not be tender). Remove from heat; transfer to mixing bowl. Cool 5 minutes. Stir in milk, yogurt, 1 tablespoon honey, cinnamon, salt, and dried fruits. Cover; chill 12 hours or up to 3 days.
  • To serve*, Oatmeal can be served cold.  Top with a sliced banana, cinnamon, honey and almonds.
  • *Note: This may also be served hot.  Heat oatmeal in saucepan over low heat 10 minutes. Stir in the remaining 1 tablespoon honey. Divide among serving bowls. Top with almonds and sliced banana.

mmm I love oatmeal! I’m very boring with it though, just eat mine with apple. I’ve been wanting to try new things in it but I’m also very picky with my oatmeal so it’s a fine line ahha

YUM. My favourite way to eat oatmeal is hot (esp in the dead of winter) with almond milk, brown sugar and banana slices. Simple but so perfect!

i always forget about overnight oats as an option! mostly because i’m never really planning for my breakfast at night. so i’ve been eating hot oats all summer. maybe i’ll actually remember tonight?! hopefully. i’ll set an alarm :)

Overnight oats! You ladies get credit for introducing me to the idea last summer. It’s still my favorite way to enjoy them. I may have to try this steel cut oats version – never had this type of oat before.
