How was your weekend? It’s hard to believe that Christmas is less than two weeks away! It’s even harder to believe that I only have 5 more graduate classes before I am completely finished with my degree! This weekend was not very eventful for me. I spent the majority of the time working on final papers and distracting myself from writing them. One highlight of my weekend was making Buffalo Chili. Last winter when I was shopping in Whole Foods they were handing out free samples of Buffalo Chili and recipe cards for the Chili. I loved the Chili and picked up a card but never made it. Finally, almost a year later, I decided to make it. This recipe requires minimal ingredients and it is very quick and easy to make. Feel free to substitute Ground Turkey, Chicken, or Beef for the Buffalo. However, I highly recommend that you try the Buffalo. It’s fantastic. This Chili would be perfect for a chilly night or a football party. Best of all this Chili is extremely healthy as it’s loaded with lean meat, beans, and vegetables.
Whole Food’s 30-Minute Buffalo Chili
Serves about 5-6
Ingredients
- 2 Tablespoons Extra Virgin Olive Oil
- 1 medium onion, chopped
- 1 garlic clove, chopped
- 1/2 cup red bell pepper, diced
- 1/2 cup green bell pepper, diced
- 1 lb. Ground Buffalo
- 1 (28 oz.) can Whole Tomatoes with Basil
- 2 (15 oz) cans Organic Chili beans (seasoned) or 2 cans of Red Kidney Beans, drained**
- 1 (15 oz) can Organic Pinto beans, drained
- 1 (15 oz) can Organic Diced Tomatoes with Green Chilies, do not drain
- 3 Tablespoons Chili Powder
- Sea salt and ground black pepper, to taste
- 1-2 Tablespoons of Paprika if not using the seasoned Chili Beans**
Directions
- Heat oil in a medium soup pot and saute the garlic, onions, and peppers for 2-3 minutes until soft and beginning to caramelize.
- Add buffalo and saute until brown.
- Add remaining ingredients. Mix thoroughly, bring to a boil, cover, reduce the flame to medium-low and simmer for 15-20 minutes.
- Season with salt and pepper.
- Serve. Garnish with cheese, green onion, or sour cream as desired.

I love veggie chili on top of spaghetti with cheddar cheese and green onions and corn bread. Yummy!
