We have been saying for literally years that we wanted to make Kath’s Baked Banana Oatmeal. Finallllllllly we made it. I really don’t understand why we procrastinated for so long. It is not hard to make at all. Baked oatmeal is so different than stove top oatmeal. You will have to give this recipe a try to see what we mean. We also loved the caramelized topping. If you really want to put this bowl of oatmeal over the top, enjoy with a nice sized scoop of Peanut Butter.
Kath’s recipe was originally made to serve 4, but we cut her recipe in half and served it in individual bowls instead of in a large baking dish.
Baked Banana Oatmeal
Serves 2
Ingredients
- 1 Banana, mashed
- 1 Banana, sliced
- 1 cup Rolled Oatmeal
- 1/8 tsp Kosher Salt
- 1/2 tsp baking powder
- 1 large egg, beat (or a little less)
- 3/4 cup skim milk
- 1/2 tsp vanilla extract
- 1 Tablespoon brown sugar
Directions
- Preheat oven to 375*
- Combine dry ingredients (oatmeal, baking powder, salt).
- In a separate bowl, combine wet ingredients (egg, mashed banana, skim milk, vanilla).
- Pour the wet ingredients into the dry ingredients. Mix well.
- Spray 2 small pyrex glass bowls (oven-safe) with cooking spray. [we used a 470 mL bowls]
- Layer some banana slices on the bottom. Pour batter into bowl. Top with remaining banana slices.
- Bake for about 26 minutes.
- After 26 minutes, turn broiler on high.
- Sprinkle oatmeal with brown sugar and broil for 3-4 minutes to form a bubbly caramelized sugar topping like creme brulee!
- Enjoy warm with a scoop of Nut Butter.

i’m not going to lie: the instant oats are my favorite way to go. but this looks like something i’d be willing to try on the weekends when i have more time than a grab and inhale meal
how much peanut butter should we scoop on top ? what does a good spoonful constitute ?

Love baked oatmeal! I usually do apples with cinnamon and spices but I may need to try this next time I have to eat breakfast before heading out on a cold morning.
