Capogiro is one of my favorite places to go in Philadelphia. They are known for their gelato that they make fresh every morning. They serve your typical flavors, but also have many different unique flavors that you may have never imagined would be a flavor of gelato. I have been there a ton of times so I have tried a lot of their different flavors of gelato.
In addition to gelato, Capogiro also sells breakfast and granola is one of the few items on their menu. In a recent issue of Philadelphia Magazine, they shared local, healthy recipes and I was delighted to see that Capogiro’s Granola was one of them. I love granola and have made my own granola many times in the past. Check out the different granola recipes we have on our blog under the breakfast tab! Until I made Capogiro’s Granola, I would say that my favorite recipe so far has been Bon Appetit’s Granola. But now, after making this granola, I think it’s a pretty close call between Bon Appetit’s and Capogiro’s.
This recipe makes a TON of granola. The magazine said that it made 6 servings, but trust me it is much, much more than that.
Capogiro’s Granola
Ingredients
- 6 c. old-fashioned oatmeal
- 2 1⁄4 c. pepitas (pumpkin seeds)
- 2 1⁄4 c. sliced almonds
- 2 1⁄4 c. unsweetened coconut flakes
- Pinch salt
- 3⁄4 c. butter
- 3⁄4 c. honey
- 1 c. dried cranberries
Directions
1. Preheat oven to 350° Fahrenheit, and place a rack in center of oven.
2. Combine oats, pepitas, almonds, coconut and salt in a large bowl, and mix well.
3. Melt butter and honey together in a small saucepan over medium-low heat, stirring until combined and bubbling slightly.
4. Pour butter mixture over oat mixture. Toss with a spatula until dry ingredients are evenly coated.
5. Pour mixture in an even layer onto a sheet pan lined with a Silpat (a non-stick baking mat) or parchment paper.
6. Bake 10 minutes, then rotate pan and stir granola to ensure even cooking. Bake an additional 10 minutes, until granola is dark golden brown and crispy. Remove from oven and let cool completely.
7. Transfer cooled granola to an airtight container. Add dried cranberries, and mix well to combine.
