Simply put, this was my favorite soup ever. I am a huge sweet potato fan and I can’t believe it has taken me this long to make sweet potato soup. I have had sweet potato soup a few times at different restaurants and I have to say that this version of sweet potato soup is better than all of those. Before the sweet potatoes steal the show, I want to mention that this is technically a sweet potato & carrot soup. I found that this soup has the perfect amount of spiciness to it. The spice is not overwhelming; rather, it is very subtle. If you prefer no spiciness at all to your soups, feel free to omit the red pepper flakes. I also love the addition of fresh ginger. This is not a necessity but I think it gives the soup a wonderful, unique flavor. Also, this recipe calls for roasting the sweet potatoes and carrots, which really brings out the flavors of the veggies.
spicy roasted sweet potato and carrot soup with ginger
Serves 4.
- 4 carrots, peeled & cubed
- 2 sweet potatoes, cubed
- Olive Oil
- 1/2 teaspoon of red pepper flakes
- 1/2 teaspoon paprika
- 2 teaspoons cumin
- ~1 1/2 Tablespoons roughly chopped fresh ginger
- Salt & Pepper
- 1 1/4 cups Half-and-Half
- 4 cups of chicken broth
- Pumpkin Seeds, for garnish
Directions
- Preheat the oven to 425F. Chop the sweet potatoes and carrots into equal sizes. Combine sweet potatoes, carrots, olive oil, red pepper flakes, cumin, paprika, salt & pepper on a baking sheet. Roast in single layer for about 40 minutes.
- Add roasted veggies to large pot. Add chicken broth, half-and-half, and chopped fresh ginger. Using an immersion blender, puree the soup until smooth. If you do not have an immersion blender, then use a regular blender or food processor. Reheat the soup slowly.
- Serve soup in bowls & garnish with pumpkin seeds.

Came across this recipe while searching for ideas to help a gluten free friend going through chemo. One of her favorite foods is sweet potato, so I made a nice big batch of this and it is VERY good!
