Finally, the weather is nice! By the way- that’s the Baltimore forecast down there. I have had enough of the cold, havent you? As I type this, the windows and doors are all open and the music is playing and I am just loving life right now! There are only 27 days left of college...how crazy is that?! Although I am exciting to go to PA school and move on in my life, I don’t really want to graduate. Loyola has truly been the best 4 years of my life and I am going to be sad to leave all the memories behind

So to make me feel a little better, I decided to post a delicious recipe for COOKIES ‘N’ CREAM OREO FUDGE BROWNIES that my friend Megan made one night. They are G-O-O-D. And you should probably make them RIGHT NOW!
Cookies ‘n’ Cream Oreo Fudge Brownies

1 box brownie mix (I used Ghirardelli Double Chocolate brownie mix)
Eggs & oil (as called for by the brownie mix)
1 heaping half cup (6 oz) cookies & cream ice cream
1/4 cup hot fudge topping (chilled or room temp)
Double Stuf Oreos
1. Preheat oven according to box directions & spray an 8×8 baking dish generously with cooking spray.
2. Combine brownie mix, eggs, and oil as directed on the back of the box, but do not add the water.
3. Add ice cream and hot fudge to the brownie batter and stir to combine.
4. Pour half of the brownie batter into the baking dish, layer with Oreos, then top with remaining batter. Bake for 40-50 minutes or as directed on the back of the box.

I like mint brownies. My mom always melted peppermints and swirled them into the brownie batter around Christmas time. It’s so good!! Oreo brownies sound so easy. Who doesn’t love Oreo spiked baked goods!?
