Soup is so great. Not only is it affordable, it is also very simple to prepare and delicious. This soup uses basic ingredients and is filled with beans which makes it really healthy! Since there are beans involved, this soup takes on a very creamy texture when pureed. So this creamy soup has no cream in it. I thought that this soup was fantastic. I froze the leftovers and have been bringing this to lunch with me all week. Nothing is better than having a delicious homemade meal for lunch!
Creamy Bean Soup with Spinach (Serves 5)
Ingredients
- 3 tablespoons olive oil
- 3 cups onions, chopped (2 medium onions)
- 3 cloves garlic, minced
- 1 tablespoon rosemary, chopped
- 2 (15 oz.) cans of chickpeas, drained and rinsed
- 2 (15 oz.) cans of cannellini beans, drained and rinsed
- 5 cups low-sodium chicken broth
- 6 oz. baby spinach
- salt and freshly ground black pepper
- parmesan cheese, shaved/grated (for serving)
Directions
- Heat olive oil in large pot over medium heat. Add onions and saute until onions are soft about 10 minutes. Add garlic and saute a few more minutes.
- Add rosemary and cook for 1 minute. Add all broth and beans. Bring soup to boil, reduce heat to medium-low and simmer until flavors blend about 10 minutes.
- Use an immersion blender to puree soup or working in batches transfer soup to a blender and puree until smooth and return to pot.
- Mix and spinach. Season soup with salt and pepper.
- Serve and sprinkle each serving with grated or shaved parmesan cheese and a drizzle of olive oil if desired.

I love bean soups! I fell in love with soup when I had panera’s black bean soup for the first time. I don’t care if it’s frozen, it’s amazing! I also love the Senate Bean Soup from whole foods. I bet I would love this soup too!
This looks awesome, I actually really want to make this asap! I love soup, I don‘t think I can pick a favorite though. I‘m non soup discriminatory!
