I cannot believe Memorial Day Weekend is already upon us! How did that happen?! Although this summer wont be as fun as it usually is for me (due to PA school starting up on June 8th) I am still very excited for it! I will say though, I prefer Margate in the fall/spring more so than the summer. It gets so packed down here in the summer! On the off season Margate is so calm and beautiful…I just love it! I’ll take the summers in Margate too though
This morning I road my bike to get a bagel (trail mix bagel with cinnamon raisin walnut cream cheese…NOM NOM NOM) and an iced coffee; I sat outside the shop enjoying my breakfast by myself….it was SO nice. Then I took my doggie Bradley for a walk to the beach. It was beautiful on the beach. I had one of those mornings where I was just genuinely happy and loving and appreciating life. The view on the beach was so pretty and watching bradley play made me incredibly happy inside (can I get ANY cornier???). Dogs find joy is such SIMPLE things in life….we humans have to start doing that more often. Bradley and I raced each other down the beach…he beat me (grrr) and I wrestled with him in the sand hahaha….my mom is NOT going to be too pleased with all the sand we drug back with us into the house…shhhh don’t tell her it was me and bradley boy!
Anyway…back to the topic of this post! After Easter Break my roommate Hillary brought back granola bars that her Mom had made for her. She put them in the freezer and told me if I ever wanted to taste one that I could help myself. I forgot all about them until one day I was searching the kitchen for a snack and couldn’t find anything to eat. Then I opened the freezer and there they were…sitting there in a bag in the freezer…calling me name. TINA, TINA…EAT ME! So I grabbed one of the bag and ate one! And my oh my, they were SO GOOD!!! I immediately texted Hillary to tell her that (a) I stole one of her granola bars and (b) they were AMAZING and she had to get the recipe for me! Thank you Hillary’s Momma and Hillary for sharing this recipe with me! Please do yourself a favor and make these pronto! We still love our other recipe for granola bars …it’s hard to compare such different recipes but I think these new ones take the crown.
P.S. Below is a picture of Hillary and I. I am so happy that I roomed with Hillary this year. I didn’t know Hillary as well as my other friends knew her going into the year but as time went on, and especially during this past semester…I got closer and closer to Hillary. She is awesome and so nice…I am gonna miss her next year. YES, hillary…I AM GOING TO MISS YOU! hahah and Hillary’s mom is a pastry chef…how cool is that? I would love to live in that household
Hilary’s Mama’s No-Bake Granola Bars
Ingredients
- 1 mashed banana
- 1/2 cup shredded coconut
- 1 1/2 cup oats
- 1/2 cup maple syrup (can substitute honey)
- 1/2 cup peanut butter
- 1/2 cup chocolate chips
- 1 tsp vanilla
- 1 1/2 tsp cinnamon
- 2 tbsp chia seeds
- 2 tbsp flax
- pinch of salt
- 2 tbsp wheat germ ( or protein powder)
- 1/2 cup dried fruit (cranberries, raisins-handful of each)
- 1/2 cup nuts (almonds, walnuts, pecans-handful of each)
Directions
- Stir all ingredients together
- Line dish/tin with tin foil
- Wet hands and pat into rectangle shape however thick you want
- Pound it to get all air out or roll glass over it…we used a meat tenderizer (the hammer-looking tool in your kitchen!)
- Freeze for about an hour and then cut into pieces and then wrap each one in saran wrap.
- Store in fridge or freezer
