easy and light shrimp dinner

I promise we are still alive.  We have been extremely busy with work, moving, and other things!  We are finally pretty much all moved in…just waiting on a few more things to be delivered.  We are still trying to settle in and I still have a bunch of clothes to put away which I plan to do this week.  We have already been enjoying the new place and have already made our new favorite granola bars, Barbuzzo’s Salted Caramel Budinos, Our Pasta Sauce, Grilled Lime and Cilantro Sweet Potato Wedges, and many other of our favorites!

Now, I will share with you a quick and light dinner Christina and I threw together a couple of weeks ago while we were at our house in Margate (which is located by the beach).

Sometimes the simplest of dinners are the best dinners.  After weeks of eating out a lot and over-indulging just a tad, it is sometimes nice to sit down to a lighter and fresh dinner.  Sure I ate about 4 times as many sweet potatoes than shown in this picture, but nonetheless, it was still what I consider to be a light dinner…especially when you are eating Cinnamon-Raisin Bread Pudding with Vanilla frozen yogurt for dessert.  This is just a fun dinner to kick off the summer with.

To prepare this, we used a Chili-Lime Rub on the Shrimp (along with olive oil & lime juice) and threw them on the grill.  For the sweet potatoes, we prepared our favorite recipe (Grilled Lime and Cilantro Sweet Potatoes)…minus the cilantro since we did not have any on hand.  To serve along with the shrimp and sweet potatoes, we roasted Jersey Asparagus in the oven.  Everything was perfect about this dinner!

On another note, I bought a ticket to the Healthy Living Summit which is in Philadelphia!!  I am super excited because not only is this in Philadelphia (which means no hotel/travel costs), this is also my first real blogging event!  I’m so excited to meet so many of the bloggers out there!  Is anyone else attending the Healthy Living Summit in Philadelphia?

The chili lime rub sweet potatoes sound really good! I always default to cinnamon when I make sweet potatoes so I should expand my horizons and try that.
