
For as long as we can remember, our Mom has always made Strawberry Shortcake for my Dad’s and Mary’s Birthdays since our birthdays are in the summer months. This cake is without a doubt a favorite of ours. Our mom has never used a traditional shortcake recipe and instead uses a jellyroll recipe.
We love when our Mom makes strawberry shortcake, especially because when the cake comes out of the oven, she trims the sides of the cake and we get to eat the trimmings! It’s fantastic…especially with a sprinkling of powdered sugar!
If you’re looking for a way to enjoy the summer berries, I would definitely make this cake. Our family has been making it for as long as I can remember and it is still a favorite of ours.
Strawberry Shortcake
Ingredients
- 4 eggs
- 1 1/3 cups granulated sugar
- 1/2 cup water
- 1 1/3 teaspoons pure vanilla extract
- 1 1/3 cups all-purpose flour
- 1 1/3 teaspoons baking powder
- 1/2 teaspoon salt
- powdered sugar
- Strawberries, Blueberries, etc.
Directions
- Rinse and slice strawberries. Cut larger strawberries for the top of the cake and smaller strawberries for the middle layer. Place in a bowl with a few tablespoons of sugar and mix. This will help to create a juice that you will need later.
- Heat oven to 375 degrees. Line a 18 x 12 or 17 x 11 pan with aluminum foil or waxed paper. Wax generously.
- Beat eggs in small mixer bowl on high speed until very thick and lemon colored, about 5 minutes.
- Pour eggs into large mixer bowl.
- Beat in sugar gradually. Beat in water and vanilla on low speed.
- Add flour, baking powder, and salt gradually, beating just until batter is smooth. Pour into pan.
- Bake until wooden pick inserted in center comes out clean, about 12-15 minutes. Immediately loosen cake from edges of pan; invert on towel sprinkled generously with powdered sugar. Carefully remove foil/waxed paper. Trim off stiff edges if necessary (these are the scraps that you get to eat!)
- Allow cake to cool. Then cut the cake in half.
- To Assemble Cake: Drizzle juice from strawberry bowl over the top of the bottom layer. Cover bottom layer with homemade whipped cream and then top with strawberries/blueberries. Place top cake layer on top of bottom and repeat process.
Homemade Whipped Cream
Ingredients
- 1 1/2-2pts. whipping cream/heavy cream
- 7 tablespoons of confectioner’s sugar
- 2-3 teaspoons pure vanilla extract
Directions
- Place cream in a bowl and begin to whip with a hand mixer.
- Gradually add sugar and vanilla extract.
- Beat until desired texture making sure to not over-beat the cream.
*It helps to place bowl and beaters of the hand mixer in freezer before making.
On Saturday night, our Aunt Dottie, Uncle Art, Mommom, and Poppop (our Dad’s parents) came over for dinner. Our Mom cooked up a delicious feast of lobster tail, steak, corn on the cob, marinated tomatoes and roasted peppers with Burrata cheese with fresh Atlantic City bread (Formica’s!). We ate outside and enjoyed the beautiful weather. It was such a fun and relaxing night with the family…I love nights like those!

How was your fourth of july weekend? The weather in Margate was absolutely beautiful! We took advantage of the weather and got in some good beach time and a nice long bike ride to Sea Isle (the second photo below is taken at the top of the Ocean City bridge on bike ride to sea isle on Saturday morning!).
