running and fig & gorgonzola flatbread

Hello there!  While we haven’t been so great about updating our blog, we are still reading all of our favorite blogs.  As I said before, we have both been extremely busy so it’s hard to find time to blog.  However, I have made it a goal of mine to find the time to blog because I do miss it!

Last weekend was definitely one of the best weekends of the fall (even though it was still officially summer).  The weather was absolutely perfect and fall-like.  It was sunny and in the low 70′s.  Perfect.  The only downside of last weekend was being horribly sick.  But that didn’t matter, because on Sunday I ran the Philadelphia Rock ‘n’ Roll 1/2 Marathon.  I ran this race for the first time last year and had a really fun time.  I wasn’t going to sign up again this year since the race was only 3 weeks before Chicago, but my sister signed me up a while ago not knowing this.  So since I had a bib number, I was definitely going to run.  I had a 20 miler planned for that day, so I ran 7 miles down to the start of the race and met up with my sisters and Jen, Christina’s friend from PA School.  I was planning on running this race really slow, especially because I was feeling really sick, Chicago was 3 weeks away, and I was running 20 miles that day.  We started off pretty slow, but still faster than I had planned.  We ended up running the race at a fairly decent pace.  I definitely did not push to my limit by any means, but I ran way faster than I had planned to.  Danielle and I finished in 1:48:26 which is a pace of 8:16. I had so much fun and ran the entire race with my older sister, Danielle.  We chatted the whole time and just enjoyed running together on such a beautiful day.

Afterwards, we all got brunch at Cafe Lift  which was fantastic.  Todd and I have been there before and it’s definitely one of the better places in the city to get brunch.  We spent the rest of the day relaxing inside aka dead in my bed feeling terribly sick and walking around shopping for a few things.  It was a perfect Sunday!

Now, a week later, I am finally getting over my sickness.  Even though I feel so much better, my nose is still very stuffy.  But this is nothing compared to how I felt before, so I’m happy about that.  However, I haven’t been able to get many runs in this week because of being sick, work, and just being pure lazy.  There are two more weeks until Chicago and it will be here before I know it!  I’m pretty nervous because I just don’t feel prepared.  Then again I think I feel like this every time I taper.  I also think that I pulled/injured my achilles tendon.  After one of my only runs this week, it was bothering me and I haven’t ran since.  I’m not sure if I’ll be able to get a long run in this weekend either.  I’m hoping that it begins to feel better.  I have been icing it, but I’m not sure what else I can do for it.  Any advice??

A couple of weeks ago I was shopping in Whole Foods and saw whole wheat Lavash bread and it sparked an idea in my head to recreate a flatbread that I had recently at Audrey Claire .  The flatbread had fresh figs, gorgonzola, honey, and sunflower seeds and was absolutely delicious.  I thought that this would make a quick and easy dinner since I don’t have a ton of time to cook during the week.  This turned out amazing.  I can’t wait to make it again.  The lavash was the perfect bread to use.  Christina and I have already been talking about other flavor combinations for future lavash flatbreads.

Congrats on a great race! Even with being sick and taking it easy, that’s a good time. I’m sure you’ll do awesome in Chicago! And that pizza…. it looks sooo good. Thanks for sharing!

Oh my gosh I was at that race! My coaches ran it but we couldn’t find them since it was so crowded. I was at the finish though around when you finished, that’s so funny! Congrats on a great race and great time.
