Chicken Romano

Ingredients

  • 4 Boneless, Skinless, Chicken Breasts
  • 1 tsp freshly ground pepper
  • 1 tsp salt
  • 1 tsp garlic powder
  • Canola Oil
  • 1 C flour
  • 4 Large Eggs
  • 1 T Whole Milk
  • 1 C Freshly Grated Romano Cheese
  • 1/2 C dry white wine
  • 1/3 C chicken stock
  • 2 lemons
  • 2 T unsalted butter
  • 1/4 C chopped fresh parsley

Directions

  1. Preheat oven to 350 degrees
  2. Season chicken with salt & pepper
  3. Set up an assembly line of 3 bowls (#1 flour, s&p, garlic powder, parsley #2 egg and milk #3 cheese)
  4. Heat large skillet over medium high and add canola oil. Dredge chicken though flour and then egg and then cheese mixture. Add to skillet and cook 5 minutes person side or until golden brown.
  5. Once browned, add the wine. Turn off heat. Add chicken stock, juice of 1 lemon and cut the other lemon into wedges and place in the skillet. Add the butter.
  6. Place skillet in oven and bake for 20-25 minutes. Remove from Oven and sprinkle with parsley. Let cool for 5 minutes before serving
