Whole Wheat Banana Bread
Bread is definitely one of our favorite foods. We aren’t talking about the processed and packaged bread that you will find in your local grocery store. We are talking about bread fresh from a bakery or better yet, your kitchen! This recipe is packed with healthy ingredients and features some of our favorite foods. The yogurt replaces the butter or oil and whole wheat flour is used in place of regular white all-purpose flour. These small exchanges result in a banana bread that actually tastes great and is great for you. We really enjoy smearing this bread with peanut butter…try it and let us know what you think!
(Makes 2 Loaves)
Ingredients
- 4 medium, ripe bananas (mashed)
- 1 cup Plain non-fat yogurt
- 1 egg
- 3/4 cup brown sugar
- 1 cup raisins
- 2 1/2 cups Whole Wheat Flour
- 1 tsp Baking Soda
- 1 tsp Salt
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1/2 tsp nutmeg
Directions
- Preheat oven to 350 degrees.
- Spray loaf pans (8.5 x 4.5 x 2.5)
- Mix dry ingredients in one bowl and wet ingredients in a separate bowl.
- Add wet ingredients to dry ingredients and stir until blended. (Do not over mix)
- Bake for 50 minutes
- Cool in pans on wire rack for 5-8 minutes.
- Remove from pans and cool completely.
