Blueberry Oat Cakes
Definitely give this recipe a try if you are sick of the same old oatmeal, cereal, yogurt, eggs, etc for breakfast every morning. Its a fun way to keep breakfast both exciting, delicious, and nutritious. There is plenty of room for experimentation. Blueberries (especially Jersey) are delicious in these oat cakes…especially when the blueberries are heated and practically bursting with flavor. You can try substituting in raisins for the blueberries if you do not have any blueberries on hand!
Makes 2 Oat Cakes.
Ingredients
- 1/4 c. oats
- 1/8 c. whole wheat flour
- 1/4 c. low-fat milk
- blueberries
- little less than tsp baking powder
- cinnamon
- little squirt of honey
- a dash of salt
Directions
- Stir all of the ingredients together & let it sit.
- Place them in a heated pan that is greased with butter or cooking spray.
- Enjoy with your choice of topping…the possibilities are endless! Maple Syrup, Honey, Mashed Banana with Cinnamon, Peanut Butter, Greek Yogurt…
