Breakfast Cookie
“Breakfast Cookies” are a great breakfast when you want something quick, filling, and of course…delicious. you make the cookie the night before and let it sit in the fridge overnight. In the morning, all you have to do is add your preferred topping and enjoy! However, these cookies do not satisfy the taste buds of all…for instance Mary is not a #1 fan of them!! Guess you will just have to give it a try for yourself (and of course experiment with different combinations!)
(1) Combo One
Ingredients
- 1/2 C oats
- 1 T Almond Butter (or PB)
- sprinkle of flaxseed
- 1 T shredded coconut
- 2 T skim milk
- 1/2 mashed banana
Directions
Mix all of the ingredients together in a bowl. Roll out the mixture onto a plate into a large cookie. Place plastic wrap the plate and place in the fridge overnight. In the morning, add your desired toppings (yogurt, PB, Banana, etc.) and enjoy!

(2) Combo Two
Ingredients
1/2 C oats
crushed almonds (I crushed about 6 almonds?)
banana (1/2 mashed, 1/2 sliced for the top)
2 T of unsweetened chocolate almond milk
sprinkle of flax
1 T almond butter (or PB)
Directions
Mix all of the ingredients together in a bowl. Roll out the mixture onto a plate into a large cookie. Place plastic wrap the plate and place in the fridge overnight. In the morning, add your desired toppings (yogurt, PB, Banana, etc.) and enjoy!
