Ellie Krieger’s Nutty Granola

There is no denying that granola is delicious.  However, some packaged brands are not so good for you; they are loaded with sugar and other additives.  We decided to try Ellie Krieger from the food network’s recipe for granola.  However, we did make some adjustments!

Before going into the oven.

Ingredients

  • 3 cups old-fashioned oats
  • 1/2 cup unsalted raw walnuts, chopped
  • 1/2 cup unsalted almonds, chopped
  • 1/2 cup unsalted pecans, chopped
  • 1/2 cup pumpkin seeds
  • 1/2 cup unsalted sunflower kernels
  • 1/2 tsp. salt
  • 1/2 tsp + cinnamon
  • 1/2 tsp pure vanilla extract
  • 1/4 cup + Pure Maple Syrup

Directions

Preheat oven to 350 degrees. Spray a baking sheet with cooking spray.

In a medium bowl combine the oats, nuts/seeds, maple syrup, cinnamon, vanilla, & salt. Spread the mixture evenly onto baking sheet and bake until golden brown about 20-30 minutes. Let cool completely and store in the refrigerator in an airtight container.

Very tasty. As it came out of the oven, I immediately ate it over vanilla frozen yogurt. My only, tiny, tiny complaint about this granola is that it did not clump. If you are into more of a clumpy granola and you are a fan of  peanut butter…try out this recipe
