Peanut Butter Granola
While Ellie Krieger’s recipe for granola is indeed delicious, it does not clump. And what is better than clumpy granola?? answer…clumpy PEANUT BUTTER granola!!!! haha

Ingredients
- 1/3 cup peanut butter (I used Natural Creamy Peanut Butter)
- 1/3 cup honey
- 1/2 tsp salt
- 1/2 tsp pure vanilla extract
- 3 cups of oats
- 1/2-1 cup of chopped unsalted peanuts
- 1 tablespoon butter
Directions
Preheat oven to 350 degrees. In medium sized pot, melt the peanut butter and butter together over medium-low heat. Add the honey, salt, vanilla extract. Cook until creamy and heated throughout being careful not to burn the mixture. Add the Oats and chopped peanuts. Mix together until the oats are coated with mixture. Pour out onto ungreased baking sheet. Spread out mixture evenly. NOW…this is what I think helped to clump the granola…
- Tip #1 for making clumpy granola: Using your hands, press the granola down–kind of like you are making one gigantic cookie. You can lightly oil your hands to help the granola from sticking to your fingers.
Bake granola for about 10 minutes…keeping a very careful eye on it! It is very easy to burn!
- Tip #2 for making clumpy granola: When the granola comes out of the oven, place something heavy on top of the baking sheet to press granola down as it cools. This will help to create big clumps that you can break down into smaller clumps! I had an identical baking sheet that I placed right on top of the other and I placed bottles of wine on top of the baking sheet to push pressure down on the granola. You can of course be creative and come up with your own pressure concoction!
