Pumpkin Overnight Oats

Pumpkin overnight oats is a fantastic way to shake up your usual overnight oats…and to use up some of your canned pumpkin!  It is a perfect recipe for a fall morning….the added walnuts add a great crunch and the nutmeg, pumpkin pie spice, and cinnamon add a great kick!

Ingredients

1/3 C oats

1/3 C pumpkin

1/2 C unsweetened vanilla almond milk

1/4 C plain FF yogurt

3 medjool dates

Directions

Soak the above ingredients overnight.  Add cinnamon, pumpkin pie spice, nutmeg, chopped walnuts, more almond milk (if needed)  in the morning.
