Chicken & Veggie Stir-Fry

Making a stir fry is a lot of fun.  There are endless possibilities.  You can make them vegetarian friendly or add meat for some protein.  Not only is it fun, it is easy.  This is a simple meal that you can make on a weeknight when you are pressed for time.  Even better, you can make extra to bring with you to work for lunch the next day.

Our favorite short grain brown rice

Ingredients

  • Mixed Veggies (asparagus, bell peppers, squash, broccoli, string beans, carrots, etc.)
  • Chicken Breast
  • Teriyaki/Stir-Fry Sauce
  • Brown Rice (Nishiki Short Grain Brown Rice is our favorite)
  • Canola Oil/Sesame Oil

Directions

  • Preheat a pan or wok with canola oil or sesame oil.
  • Meanwhile, cook rice in a pot.
  • Once pan is heated, cook sliced chicken until just cooked through.
  • Add veggies to the pan along with Teriyaki/Stir-Fry sauce.
  • Once cooked, place rice on plate and top with chicken & veggie mix.
