Chicken & Veggie Stir-Fry
Making a stir fry is a lot of fun. There are endless possibilities. You can make them vegetarian friendly or add meat for some protein. Not only is it fun, it is easy. This is a simple meal that you can make on a weeknight when you are pressed for time. Even better, you can make extra to bring with you to work for lunch the next day.
Ingredients
- Mixed Veggies (asparagus, bell peppers, squash, broccoli, string beans, carrots, etc.)
- Chicken Breast
- Teriyaki/Stir-Fry Sauce
- Brown Rice (Nishiki Short Grain Brown Rice is our favorite)
- Canola Oil/Sesame Oil
Directions
- Preheat a pan or wok with canola oil or sesame oil.
- Meanwhile, cook rice in a pot.
- Once pan is heated, cook sliced chicken until just cooked through.
- Add veggies to the pan along with Teriyaki/Stir-Fry sauce.
- Once cooked, place rice on plate and top with chicken & veggie mix.
