Grilled Peaches with Mascarpone
For the past couple of summers, we have said time and time again that we wanted to grill peaches for dessert and serve them with vanilla ice cream. Well, I (Mary) finally got around to grilling peaches for dessert. While vanilla ice cream would have been a good topping for the grilled peaches, I opted to try something a little bit more interesting. It turned out that the topping I created was much better than the vanilla ice cream. Not only is this “recipe” delicious, it is very easy to prepare. The mascarpone topping would also work very well with mixed berries.
Ingredients
- Ripe but firm peaches, cut in half, pits removed
- Mascarpone Cheese
- Honey
- 1 Vanilla Bean Pod
- Canola Oil
Directions
- Heat Grill on Medium-High.
- Scoop a few tablespoons of Mascarpone Cheese into a bowl. Mix in a ~1 Tablespoon of Honey.
- Using a knife, carefully cut a slit from the top of the Vanilla Bean Pod to the bottom. Do not cut the bean in half. Simply cut the top of the bean.
- Once there is a slit in the top of the bean, run the blade of your knife along the inside of the bean to collect all of the vanilla bean seeds.
- Mix the seeds into the mascarpone and honey mixture.
- Lightly brush cut side of peach with canola oil.
- Place cut side down the grill. Cook for 5-10 minutes or until grill marks appear.
- Place on serving dishes and place a generous dollop of the mascarpone mixture on top of each half.
Now we are in search of other recipes that use Mascarpone cheese. Of course there is the traditional tiramisu, which we will attempt to make one of these days.
