Guacamole

Fresh guacamole is one of our favorite things to eat.  It is a both a healthy and delicious appetizer, snack, or spread/dip.  …perfect dip to make for a summertime BBQ!

Ingredients

4 ripe avocados

1 red onion, minced (~1 cup)

4 Tbl. cilantro, finely chopped

2 Tbl. fresh lime juice

1 tsp. kosher salt

dash of pepper

1 ripe tomato, chopped

*optional: 1-2 serrano chiles, stems & seeds removed, minced (if you like the spice factor)

Directions

Scoop avocado in bowl and using a fork, mash. Add onion, cilantro, lime, salt, pepper and mash. Add chiles if desired. Keep the tomatoes separated until ready to serve. *NOTE*: When storing guacamole, place saran wrap DIRECTLY touching the guacamole in the refrigerator. This will prevent the guacamole from turning brown!
