Winter Veggie Penne
If you are in a pinch and want to make a quick, nutritious, and delicious diner…this is your go to meal! We did not measure any of these ingredients out. You can just add the amount of each ingredient that you desire!

Ingredients:
- whole grain penne
- broccoli and spinach
- no salt added diced tomatoes (drained)
- no salt added tomato paste (maybe a spoonful or two?)
- garlic, minced
- salt
- ground black pepper
- parsley
- pecorino romano cheese
- red pepper flakes (use sparingly)
Directions
Cook the pasta according to the package directions and add the broccoli and spinach to the pasta for the last few minutes of cooking. Drain and return to the pot. Add the tomatoes, paste, garlic, salt, and pepper and heat through. Stir in the parsley and top with cheese…enjoy!
