Pineapple Pork Tenderloin

We have been making this pork tenderloin recipe for years and it is one of our favorites.  This recipe combines the flavors of pork, soy sauce, honey, ginger, and pineapple.  Pork is a smart choice because it is a lean source of protein and thus does not contain much fat.

Serves 8.

Ingredients

  • 3/4 cup low-sodium soy sauce
  • 1/4 cup honey
  • 1/4 cup pineapple juice
  • 1/4 cup fresh lime juice
  • 1 1/2 Tbl. grated peeled fresh ginger
  • 1 Tbl. Olive Oil
  • 2 tsp. minced garlic
  • 1/4 tsp. five-spice powder
  • 1/2 tsp. ground black pepper
  • 2 lbs. pork tenderloin
  • Chopped Fresh Pineapple

Directions

  • Combine first 9 ingredients in large zip-lock bag and add the pork.
  • Seal bag and marinate for an hour in the refrigerator, turning occasionally.
  • Remove pork and reserve about 1/2 cup of marinade. Place in a roasting pan with the reserved marinade and chopped pineapple.
  • Roast in the oven at 425 degrees until a thermometer registers around 150 degrees.
  • Let pork stand 5-10 minutes after cooking.
