Southwestern Salad

When Mary went to Paris in June 2009 she had a wonderful salad.  The thing that attracted me most to this salad was that it came with half of an avocado.  After she had this salad, she found herself craving it so she decided to recreate it when she got home.  This salad is very simple and allows for a lot of creativity.  Feel free to experiment and add some of your favorite fresh ingredients.  Be sure not to leave out that half of avocado…that’s what makes this salad truly special.

Ingredients

  • Baby Spinach
  • Spring Mix
  • Chicken Breasts
  • Southwestern seasoning
  • Avocado
  • Homemade Tomato Salsa
  • Tortilla Chips (We used yellow & blue corn tortilla chips)

Directions

  • Place a mixture of  baby spinach and spring mix in a bowl for the bed of the salad.
  • Clean and cube the breasts of chicken.
  • Preheat pan with olive oil.  Add the chicken and season with southwestern style seasoning.  Cook through.
  • Top salad with chicken, homemade tomato salsa, chicken, half of an avocado and tortilla chips.
