Spaghetti Squash Primavera

There are several ways to enjoy spaghetti squash… this one is one of our favorites.  This recipe is Meg’s Spaghetti Squash Primavera

Ingredients:

  • spaghetti squash
  • olive oil
  • garlic
  • yellow onion
  • 2 zucchini
  • 3 small red bell peppers
  • yellow squash
  • 1 jalapeno (this makes the dish pretty spicy- you may want to consider using only half)
  • salt and pepper

Directions:

Cut a spaghetti squash in half and scoop out the seeds. Place face up on a baking sheet and bake for an hour or until soft. Saute (in EVOO and garlic) the yellow onion, zucchini, small red bell peppers, a yellow squash, jalapeno pepper, S&P. Add this to the spaghetti squash. Top with your choice of sauce- marinara, primavera, etc. and sprinkle with parmigiano reggiano cheese!
