Spaghetti Squash
Have you ever experimented with Spaghetti Squash? If not, you are missing out because spaghetti squash is so much fun (yes, vegetables can be fun). Basically what you do is bake the squash and when you run a fork over the flesh, the squash comes off looking just like spaghetti. You can top the “spaghetti” with whatever you like. It is a great alternative to spaghetti and the bonus is that you can eat about 20X more spaghetti squash than pasta because it is low in calories!
Below we have a step by step guide on how to prepare spaghetti squash as well as just one of the MANY ways to enjoy it!
Steps to prepare Spaghetti Squash
Step 1: cut the squash in half and scoop out of all the insides (seeds, etc.)
Step 2: Set the oven to 350 degrees and roast for about 40-45 minutes.

Step 3: Run a fork along the flesh of the squash. ”Spaghetti’ shapes should come right off- and this should come off EASILY.

One way to enjoy the spaghetti squash
Cut up some veggies, season with EVOO, S&P, and roast in the oven at 400 for about 20-30 minutes (I used broccoli, zucchini, onion, carrots, and red bell pepper.

Top the the spaghetti squash with the veggies…and grated parm (not pictured) of course… and ENJOY!
